Vinum Conservator, LLC was established in 2007 in order to produce and market the finest wine preservation system available. It is a partnership between two good friends, Juan, who since 1982 is the owner of the world renowned French restaurant "Le Chene" in southern California, and Alain, the owner of an engineering and fabrication company since 1987.
Le Chene, like very many restaurants, in addition to an award winning selection of bottles of wine, is offering several different wines by the glass. At the end of the day, partially full bottles of wine remained and were thrown out or offered to the staff, as Juan never found a satisfactory way to preserve them for the next day or later. This represented lost revenues and also prevented the offering of finer wines by the glass.
Starting in 2007, Alain investigated different wine preservation systems on the market for the following criteria: preserve open wine bottles for at least 15 days without affecting the quality and character of the wine, cost, space requirement, ease of installation, simplicity of use, quality and reliability. No system satisfied all of these requirements, which led to the development of the patented (pending) VC-R1 wine preservation machine.
